This volume consitutes the Book of Abstracts of the ‘Austrian Food Chemistry Days 2026’ which are held at Graz University of Technology. This conference is organised on a biennal basis and provides a platform for food scientists conducting research at Austrian institutions to present and discuss their findings. Particular emphasis is placed on offering early-career researcher the opportunity to present the results of their work. 
The Austrian Food Chemistry Days 2026 focus on research topics in the field of  mycotoxins, food contaminants and allergens, food packaging, food flavour, and current developments in food analysis.
