This volume consitutes the Book of Abstracts of the ‘Austrian Food Chemistry Days 2026’ which are held at Graz University of Technology. This conference is organised on a biennal basis and provides a platform for food scientists conducting research at Austrian institutions to present and discuss their findings. Particular emphasis is placed on offering early-career researcher the opportunity to present the results of their work.
