Education for Sustainable Development in Higher Education requires rethinking learning environments to inspire students to act for sustainability. The implication for students is that they must play a leading role and be responsible for their own learning process from the very beginning, that is, from the first year at University to the last one, to enable them to live sustainable lives and to work in a sustainable economy. Moreover, thanks to the SL methodology, students have developed a sense of social responsibility, civic engagement and connection with society that go further than the inner circle of the university. <br \/>An ideal Food Sustainability Profile (FSP) for students has been developed, integrating the different skills and technical capacities that define a knowledgeable student in food sustainability. A series of pedagogical interventions (SL included) has been designed and piloted to develop students\u2019 FSPs. Both educators and learners were actively involved in this action-research process with the final set of methodologies (MH) documented as guidelines for adoption and transferability to other disciplines. Assessment tools of FSP and MH have been developed to enhance validity and they have acted as an auditing instrument for evaluating the integration of sustainability through SL within Food related degrees.<\/div>\n<div><\/div>\n<div>FR<\/div>\n<div>Ce manuel m\u00e9thodologique se concentre sur la d\u00e9finition d&#8217;un nouveau mod\u00e8le \u00e9ducatif dans lequel nous avons int\u00e9gr\u00e9 les comp\u00e9tences en mati\u00e8re de durabilit\u00e9 d&#8217;une mani\u00e8re efficace par le biais de l&#8217;apprentissage par le service (AS), tout d&#8217;abord dans les disciplines li\u00e9es \u00e0 l&#8217;alimentation et cela pourrait servir de base pour l&#8217;application dans d&#8217;autres domaines d\u2019\u00e9tudes. <\/div>\n<p>Par cons\u00e9quent, l&#8217;apprentissage des \u00e9tudiants \u00e0 partir de probl\u00e8mes du monde r\u00e9el et la mani\u00e8re de les r\u00e9soudre de mani\u00e8re holistique sont au centre de ce manuel m\u00e9thodologique, leur permettant d&#8217;anticiper et d&#8217;\u00eatre pr\u00e9par\u00e9s aux d\u00e9fis futurs en mati\u00e8re de durabilit\u00e9. Verlag der TU Graz","og_description":"ENThis methodological handbook is focused on defining a new educational model in which we have integrated the sustainability competences in an effective way through Service learning (SL), firstly in the Food Related-Degrees field and this could serve as a basis for application in other Degrees. Therefore, student learning from real-world problems and how to solve them in a holistic manner is the focus of this Methodological Handbook, enabling them to anticipate and be prepared for future challenges in sustainability. Education for Sustainable Development in Higher Education requires rethinking learning environments to inspire students to act for sustainability. The implication for students is that they must play a leading role and be responsible for their own learning process from the very beginning, that is, from the first year at University to the last one, to enable them to live sustainable lives and to work in a sustainable economy. Moreover, thanks to the SL methodology, students have developed a sense of social responsibility, civic engagement and connection with society that go further than the inner circle of the university. An ideal Food Sustainability Profile (FSP) for students has been developed, integrating the different skills and technical capacities that define a knowledgeable student in food sustainability. A series of pedagogical interventions (SL included) has been designed and piloted to develop students\u2019 FSPs. Both educators and learners were actively involved in this action-research process with the final set of methodologies (MH) documented as guidelines for adoption and transferability to other disciplines. Assessment tools of FSP and MH have been developed to enhance validity and they have acted as an auditing instrument for evaluating the integration of sustainability through SL within Food related degrees.FRCe manuel m\u00e9thodologique se concentre sur la d\u00e9finition d'un nouveau mod\u00e8le \u00e9ducatif dans lequel nous avons int\u00e9gr\u00e9 les comp\u00e9tences en mati\u00e8re de durabilit\u00e9 d'une mani\u00e8re efficace par le biais de l'apprentissage par le service (AS), tout d'abord dans les disciplines li\u00e9es \u00e0 l'alimentation et cela pourrait servir de base pour l'application dans d'autres domaines d\u2019\u00e9tudes. Par cons\u00e9quent, l'apprentissage des \u00e9tudiants \u00e0 partir de probl\u00e8mes du monde r\u00e9el et la mani\u00e8re de les r\u00e9soudre de mani\u00e8re holistique sont au centre de ce manuel m\u00e9thodologique, leur permettant d'anticiper et d'\u00eatre pr\u00e9par\u00e9s aux d\u00e9fis futurs en mati\u00e8re de durabilit\u00e9. L'\u00e9ducation au d\u00e9veloppement durable dans l'enseignement sup\u00e9rieur exige de repenser les environnements d'apprentissage afin d'inciter les \u00e9tudiants \u00e0 agir en faveur de la durabilit\u00e9. L'implication pour les \u00e9tudiants se traduit par jouer un r\u00f4le de premier plan et \u00eatre responsables de leur propre processus d'apprentissage d\u00e8s le d\u00e9but, c'est-\u00e0-dire de la premi\u00e8re \u00e0 la derni\u00e8re ann\u00e9e \u00e0 l'universit\u00e9, afin de leur permettre de vivre une vie durable et de travailler dans une \u00e9conomie durable. En outre, gr\u00e2ce \u00e0 la m\u00e9thodologie d\u2019apprentissage par le service, les \u00e9tudiants d\u00e9veloppent un sens de la responsabilit\u00e9 sociale, un engagement civique et un lien avec la soci\u00e9t\u00e9 qui d\u00e9passent le cercle restreint de l'universit\u00e9.Un profil de durabilit\u00e9 alimentaire (PDA) pour les \u00e9tudiants a \u00e9t\u00e9 d\u00e9velopp\u00e9, int\u00e9grant les diff\u00e9rentes comp\u00e9tences et capacit\u00e9s techniques qui d\u00e9finissent un \u00e9tudiant comp\u00e9tent en mati\u00e8re de durabilit\u00e9 alimentaire. Une s\u00e9rie d'interventions p\u00e9dagogiques (y compris l\u2019apprentissage par le service) a \u00e9t\u00e9 con\u00e7ue et test\u00e9e pour d\u00e9velopper les PDA des \u00e9tudiants. Les enseignants et les \u00e9tudiants ont \u00e9t\u00e9 activement impliqu\u00e9s dans ce processus de recherche-action et l'ensemble final des m\u00e9thodologies (manuel m\u00e9thodologique MM) a \u00e9t\u00e9 document\u00e9 en tant que lignes directrices pour l'adoption et la transf\u00e9rabilit\u00e9 \u00e0 d'autres disciplines.
